Totally delicious instant soup in a jar! These recipes have been making the rounds on social media and I thought I better give it a whirl. I added in cordyceps as it has a nice umami flavour , has an energizing effect and it is traditionally used in soups for immunity and strength! AND it makes the best easy lunch or dinner and each jar can be easily changed for taste. Fussy kids - they can make their own jar of noodles! (you can omit the chilli)
The vege and protein recommendations here are just a guide - you can use whatever you like or whatever needs to be used up. As a guide for the veges - it only has boiling water poured over it so the veges will still be firm. I like broccoli, kale, cabbage and snow peas! YUM! The protein needs to be precooked as the boiling water will not cook it!
Recipe
Add to a large jar -
2 tbsp chilli sauce ( I used a black bean and chilli oil and it was perfect)
2 tbsp soy sauce
2 tsp miso paste
1 tsp cordyceps
½ tsp stock powder
½ cup extra firm tofu chopped into cubes
½ cup carrot, grated
½ cup spinach
Handful coriander/spring onion/ chives
1 bundle vermicelli
1 tsp sesame seeds
Just cover the ingredients with boiling water and some lemon or lime juice 5 minutes before you want to eat - give it a stir and you have noodles!!
